Mascarpone Budino with Marsala & Berries

The name is certainly impressive, and the flavor is amazing, but there is no actual cooking required for this recipe. An excellent dessert for any meal, or a nice snack for a summer party. If you are not familiar with mascarpone cheese, you are missing out. It is a soft, mildly sweet Italian cheese frequently used in pastries and desserts.

**Note – you really need an electric mixer for this recipe. If you don’t have an electric mixer skip the first three ingredients and buy an 8 oz package of whipped topping. Add the wine to that and mix well, then follow the recipe steps for assembling below)

Ingredients

  • 8 oz mascarpone cheese. Try really hard to find this, it has a unique flavor. In a pinch you could substitute softened Neufchatel or cream cheese.
  • 1/2 Cup powdered sugar
  • 1 Cup heavy whipping cream. (half and half would work if you don’t have whipping cream)
  • 1/4 Cup Marsala wine. Any sweet red wine would likely work, but don’t use cooking wine.
  • 2 Cups of assorted fresh berries – strawberries, blueberries and raspberries work well, but use what you can find.
  • 1 1/2 Cups of short bread cookies, broken into medium sized pieces

Directions

  1. With an electric mixer beat the mascarpone cheese until it is softened and starts to form peaks (about 2-3 minutes)
  2. Add cream and powdered sugar and continue beating with the mixer until it starts to look like whipped cream, another 2-3 minutes.
  3. Add the wine and beat until it is well mixed into the cheese/cream mixture.
  4. Wash and dry your berries. Cut large berries into halves or quarters.
  5. Crumble the shortbread cookies into small/medium sized pieces. You don’t want dust, but you don’t want giant chunks either.
  6. Assemble the layers in the fanciest glass or dessert dishes you can muster. From the bottom up layer like this:
  • cookie crumbles
  • cream mixture
  • fruit
  • cream mixture
  • cookie crumbles
  • fruit

Keep refrigerated util ready to serve.
